During her years of experience with renowned winemakers in the Côte d'Or, Camille became particularly attached to one appellation: the Côte de Nuits Village of Nicolas Potel. In 2016, the following year, she decided to buy grapes from him for her first vintage: the Camille Thiriet house was born. A challenge for the young woman, full of ambition and motivation, who has long had the desire to create her own estate. She produced her first vintage in her current house, which was abandoned at the time, without water or electricity. Everything was done as it was in the Middle Ages: pumping over with a bucket, foot treading, pressing in a ratchet press, no inputs, indigenous yeasts, labelling and waxing by hand.

"It all started because I used to want to be a nose. I find there's something common in the idea of creating a perfume and creating a wine. That's why I like wines that are very expressive on the nose. Also, when I make wine, I work with my senses, the sense of smell, the sense of taste and also the sense of hearing, the fermentations are different between whole and destemmed grapes for example.

Five and a half years later, Camille manages 6 hectares of vines in organic conversion. We can also say that the challenge has been met with flying colours, since in 2022, Maison Camille Thiriet will be transformed into Domaine Camille Thiriet. Bravo Camille!
