Kei Shiogai

Domaine Kei Shiogai is the fruit of the passion and perseverance of a Tokyo-born man intent on revolutionizing the Burgundy wine scene. Kei Shiogai discovered wine in Japan, then in New Zealand, where he held various jobs in the wine industry. In 2014, he moved to Burgundy, welcoming each challenge with determination. He learns French, obtains viticultural diplomas and works in prestigious estates, reinforcing his know-how.

Kei acquires grapes from renowned terroirs, including Pommard and Gevrey-Chambertin, and personally supervises every step of the winemaking process. He favors millerandage grapes and small yields to ensure optimal concentration. Meticulous sorting, use of indigenous yeasts, whole-harvest maceration and regular pumping-over characterize his approach, with maximum risk-taking for an original result in terms of aromatics and texture.

Aging lasts two winters, allowing the wines to develop their complexity. Kei selects his barrels with care and limits the use of sulfur to the post-malolactic stage. His wines are distinguished by impressive aromatic intensity and concentration, a silky texture, powerful yet delicate tannins, and great length on the palate. Infused with floral and herbal touches, Kei Shiogai's wines perfectly blend Burgundian tradition with bold originality, promising an unforgettable tasting experience.
