The red Saint-Joseph comes from vines planted on the estate's three main terroirs. The first (with red clay soils dotted with pebbles) is located at a place called “Les Oliviers” (where the estate's white Saint-Joseph vines are located). The second, fairly predominant in the blend, is made up of several plots located against the most qualitative terroir of the appellation (the place called “Saint-Joseph” which gave it its name) with very granite soils. Finally, the third, located in the more northerly commune of Saint-Jean-de-Muzols (the first two terroirs are close to the village of Tournon) has the oldest vines in the estate on gneiss soil.

Description

During the harvest, a meticulous sorting is carried out in the vineyard and, to be respected, the grapes are transported in small crates to the cellar. Partially destemmed (about 25%), the red harvest is vinified with natural yeasts, in wooden or concrete vats. The whites are vinified entirely in wood. The Gonon brothers do not seek a thorough extraction in their red wines by limiting themselves to a few punching down and pumping over. The aging then takes place for about ten months in half-muids (not new) of 600 liters then the different containers and plots are assembled en masse shortly before the harvest of the following vintage. The bottling of the reds takes place during the winter. At the tasting, we discover a smooth and complex cuvée with fruity, floral, smoky and spicy notes. A beautiful fullness, a nice balance and an elegant tannic structure make this wine a regional revelation.
