Domaine Pierrick Bouley

The Domaine Pierrick Bouley in Volnay covers more than 9 hectares of old vines spread over 41 parcels. The estate is renowned for producing wines of remarkable elegance, subtly combining tradition and innovation. Each bottle is the fruit of know-how handed down from generation to generation, resulting in wines of exceptional quality. 

Pierrick is the sixth generation to head the estate (formerly R&P Bouley). Gradually, he adopted a different approach to growing his vines, opting for an 'organic' and 'natural' style inspired by biodynamic practices. Today, the estate is in the process of converting to organic farming, and the 2023 vintage will be the first to be certified organic.

The grapes are harvested by hand, using harvesting crates. The grapes are sorted, destemmed and not crushed. No yeast, enzymes or bacteria are added. Fermentation takes place naturally. Since 2017, no sulphur dioxide (SO2) has been added during vinification. The wines are then matured for 12 months in French oak barrels, 30% of which are new. If necessary, they are filtered slowly using a lenticular filter before being bottled on site.
