Domaine Paul Pillot

The Domaine Familiale Paul Pillot applied Chassagne-Montrachet has very beautiful appellations present on Chassagne-Montrachet, Saint Aubin, Santenay, …. In total, the estate has no less than 17 appellations spread over the Côte de Beaune for a total of 13 ha (4 ha of red and 9 ha of white).

In 2007, Thierry Pillot, the son of Paul Pillot decided to join the family estate after various training courses in South Africa, then in Australia. Today alone at the helm, he broke with his father's style and decided to “modernize” his wines. For his whites, he is adept at moderate use of new barrels (10 to 15% maximum) with longer aging than in the past. It practices long pressings, no settling or stirring, with minimal use of sulphur. He works according to the principles of organic farming without seeking to be labeled. In white as in red, this estate produces wines without artifice, refined and intense, refined without being lean, paying homage to the personality of each terroir.
