History of the estate / family
Domaine Darviot-Perrin has its roots in a rich and fascinating history, shaped by two emblematic Burgundy families. Founded in 1989 by Didier Darviot and Geneviève Perrin, this prestigious estate has rapidly gained international renown for the exceptional quality of its wines.
Didier Darviot, heir to the Darviot family of Beaune, took his first steps in the world of wine under the tutelage of his father-in-law, Pierre Perrin, a legendary figure among Meursault winegrowers. Armed with this family heritage and experience, Didier decided to create his own domaine, uniting the winemaking traditions of both families.
For many years, Domaine Darviot-Perrin remained discreet on the French market, favoring limited distribution and paying particular attention to exporting its production. This strategy has enabled the estate's wines to shine throughout the world, seducing even the most demanding connoisseurs with their unique character and unrivalled elegance.
In 2020, Didier Darviot chose to pass the torch to the next generation, entrusting the destiny of the estate to his son, Pierre-Antonin Darviot. True to the family tradition, Pierre-Antonin has undertaken to continue the work begun by his father and mother, while infusing his own vision and passion for wine.
To perfect his apprenticeship and deepen his knowledge, Pierre-Antonin chose to return to the land of Meursault, enrolling at the prestigious Lycée Viticole de Beaune to obtain his BTS in viticulture. At the same time, he worked alongside his father on the family estate, absorbing every aspect of the business with desire and enthusiasm.
Keen to broaden his experience, Pierre-Antonin also worked with Domaine Thomas Morey, where he perfected his winemaking techniques and honed his palate through tasting great Burgundy wines. In 2020, he took the decisive step of making his first wine from some of the domaine's appellations, demonstrating his talent and mastery of the craft.
Today, Pierre-Antonin Darviot proudly embodies the tradition and excellence of Domaine Darviot-Perrin, perpetuating the family heritage while opening up new perspectives for the future. With passion and determination, he is committed to preserving Burgundy's winegrowing heritage and offering wine lovers exceptional vintages that bear witness to the authenticity and grandeur of this unique terroir.

Domain philosophy
Pierre-Antonin is also deeply attached to respect for the environment and biodiversity. The estate is currently undergoing organic conversion and will be certified for the 2024 vintage. In addition, links have been established with biodynamic agriculture, using natural preparations such as 500 and 501 herbal teas, as well as natural compost. This respectful approach to nature is reflected in the purity and vivacity of the wines.
At the heart of Domaine Darviot-Perrin's approach to viticulture lies an important point: respect for the vineyard plot and terroir. Each vineyard plot has its own unique identity, which is reflected in the character of the wines. To preserve this authenticity, meticulous attention is paid to every stage of viticulture and vinification, allowing the terroir to express itself fully in every bottle.
“A very good wine, like the ones we produce in Burgundy, ensures France's international influence as much as our ambassadors present abroad.”
As a winemaker, Pierre-Antonin is firmly convinced that the quality of a wine lies in its ability to capture the essence of its terroir and reflect the know-how of those who created it.

Vineyard management at Domaine Darviot Perrin
Soil management
At Domaine Darviot-Perrin, soil management is an absolute priority, relying on practices that respect the environment and biodiversity to preserve the vitality of their vineyards.
Ploughing and organic compost: Darviot-Perrin's vines are ploughed and regularly fertilized with organic compost. No insecticides or weedkillers are used, thus favoring sustainable cultivation methods that respect the natural balance.
Limiting tractor traffic: Aware of the risk of soil compaction, Pierre-Antonin limits tractor traffic. What's more, he doesn't scratch the soil very deeply, thus preserving its structure and biodiversity.
Controlled grassing: The vines are grassed naturally, with a carefully considered approach to providing the best plants for each plot. Grass is regularly mowed and ploughed to bring organic matter to the soil, contributing to its fertility and vitality.
Use of guano-based compost: Inspired by biodynamic principles, Pierre-Antonin uses guano-based compost, a natural fertilizer rich in essential nutrients for soil and plants. This nature-friendly approach boosts vineyard health and produces grapes of exceptional quality.
At Domaine Darviot-Perrin, preserving the health of the soil is at the heart of our viticultural approach. By adopting environmentally-friendly practices, the company is committed to producing wines of unrivalled purity and authenticity, testifying to its deep respect for the earth and its precious treasures.
Vine pruning
At Domaine Darviot-Perrin, pruning the vines is a crucial step, carried out with precision and respect for the vegetative cycle. This meticulous approach aims to guarantee the health and vigor of the vineyards, while preserving the natural balance of the ecosystem.
Two pruning stages: Vine pruning is carried out in two stages. First, in December/January, the vines are dismantled, leaving long shoots. Then, a final pruning is carried out in March, delaying the budburst of the vines to combat the risk of late frost.
Transition to Poussard pruning: While all the estate's vines were initially pruned with Guyot, Pierre-Antonin Darviot opted for Poussard pruning, thus favoring a more respectful approach to sap flow and limiting the risk of wood diseases. Convinced of the effectiveness of this change after his time at the Thomas Morey estate, this transition marks a commitment to the health and sustainability of vineyards.
High trimming and precise topping: Pierre-Antonin prefers to trim the vines high, to around 1.3 meters, with topping done by hand for maximum precision and to limit soil compaction. This practice preserves more leaves, allowing the plant to better assimilate chlorophyll, while maintaining a protective cap of vegetation, providing shade for the grapes and the soil.
Manual pruning for optimum efficiency: pruning is carried out by hand, using pruning shears, to remove the internodes. This meticulous technique optimizes treatment efficiency while preserving the integrity of the vine's leaves, ensuring healthy, balanced grape growth.
At Domaine Darviot-Perrin, every gesture in the management of vine pruning is guided by a concern for quality, efficiency and respect for nature, ensuring the production of wines of exceptional quality and unrivalled authenticity.
Treatment
For Pierre-Antonin, the management of vineyard treatments is carried out with a profound respect for nature and the living world, reflecting a firm commitment to the quality and sustainability of our vineyards.
Transition to organic viticulture: As part of its approach to respecting nature, the estate has chosen not to use any pesticides, preferring exclusively organic treatments. Importantly, the estate will be certified organic from the 2024 harvest, demonstrating its commitment to sustainable, environmentally-friendly viticultural practices.
Biodynamic inspiration: Pierre-Antonin is inspired by certain biodynamic practices, notably the use of 500 and 501 treatments, such as horn dung and horn silica. These ancestral methods aim to enhance the vitality of the vines and promote the natural balance of the ecosystem.
Targeted, meticulous treatment: Treatments are carried out in small quantities and in a highly targeted manner, according to the specific needs of each vine. This meticulous approach avoids excessive tractor traffic in the vineyards, limiting soil compaction and preserving the structure of the terroir.
Adaptation to weather conditions: Treatments are planned according to the weather, guaranteeing optimum efficiency while reducing the impact on the environment. This flexible, reactive approach enables the estate to protect its vineyards while preserving the ecological balance of the region.
At Domaine Darviot-Perrin, every stage in the management of vineyard treatments is guided by a profound respect for nature and a commitment to quality. By favoring sustainable viticultural practices that respect the environment, the estate strives to produce wines of incomparable purity and authenticity, thus testifying to its attachment to the preservation of the terroir and the quality of its products.

Winemaking method
At Domaine Darviot-Perrin, winemaking is a true expression of art and passion for the terroir. Each stage is meticulously orchestrated to preserve the purity and authenticity of the grapes, resulting in wines of incomparable elegance.
For white wines
The grapes are harvested by hand by grape-pickers who carry out a selective sorting directly on the vines to retain only the best bunches. These are then transported in crates, preserving their integrity and freshness all the way to the winery.
The whole bunches of Chardonnay are carefully crushed and undergo a long, light pressing before being pre-fermented at 9°C for 24 hours. This process allows for natural settling of the must before it is poured into barrels, enabling the wine to begin fermentation exclusively in the barrel. Pierre-Antonin favors the use of indigenous yeasts, naturally present in the grapes, to fully express the character of the terroir.
The white wines are aged on lees in 228-liter French oak barrels, with 15% new barrels. This ageing period lasts 12 months, followed by a 7-month resting phase in vats, allowing the wine to rest peacefully after blending. This method gives the wines remarkable complexity and elegance, while preserving their natural freshness.
In order to limit the use of SO2, Pierre-Antonin strives to maintain a high level of CO2, thus guaranteeing the long-term freshness of the wines. However, it is important to emphasize that CO2 does not add any pearliness to the wines, thus preserving their authentic character and natural elegance.
At Domaine Darviot-Perrin, the vinification of white wines is much more than a process, it's a veritable art in which every gesture is guided by respect for the terroir and a concern for quality. Discover the excellence and finesse of their white wines, testament to the domaine's commitment to tradition and innovation in the strictest respect for nature.
For reds wines
The grapes are harvested by hand and transported in crates to avoid compacting the bunches, thus preserving their integrity and freshness all the way to the winery. Once they arrive, the grapes undergo a rigorous sorting process to eliminate all undesirable berries and keep only the finest.
The grapes are 100% de-stemmed before undergoing cold maceration in vats for 10 days. This stage gently extracts aromas and tannins from the skins, while preserving the freshness and balance of the fruit. Pierre-Antonin favors pumping over rather than punching down, contributing to a smoother extraction and softer, more elegant tannins.
The wine is then aged in oak barrels for 12 months, with around 20% new barrels, before being left in vats for a further 7 months. This period of ageing gives the wines remarkable complexity and structure, while preserving their natural balance and elegance.
Before bottling, the wines are not filtered, but only fined to remove any impurities. Pierre-Antonin then applies a low dose of sulfur to protect the wines, while maintaining a high level of CO2 to guarantee long-term freshness, without adding any pearliness to the wines.
At Darviot-Perrin, every gesture in the vinification of red wines is guided by respect for the terroir and a concern for quality. Discover the elegance and finesse of our red wines, testimony to our commitment to tradition and innovation in the strictest respect for nature.

A word about aging wines
At Domaine Darviot-Perrin, wine aging is a meticulous process, where each bottle is considered a work of art in the making. Guided by a passion for terroir and respect for tradition, the domaine's wines reveal their unique character over the years, offering an unforgettable taste experience.
The characteristics of each vintage greatly influence the ageing period of the domaine's wines, but on average, the domaine's villages reach their peak between 5 and 10 years, while the 1er crus can improve between 10 and 20 years. This range of maturity allows wine lovers to discover the full complexity and evolution of our wines over time.
The domaine's wines can be enjoyed in their youth, revealing all their expressiveness as soon as the bottle is opened. However, they are also excellent wines for laying down, capable of retaining great freshness and remarkable elegance even after many years in the cellar.
Pierre-Antonin and his father strive to maintain a high level of CO2 in their wines, thus limiting the addition of SO2 while preserving great freshness in the bottle. This approach enables the domaine's wines to retain their vivacity and brilliance, even after long periods of ageing.
A recent tasting of a 1999 Meursault Perrière impressed me with its extreme freshness and total absence of maderization. This bottle could still be cellared for another ten years, testifying to the exceptional ageing potential of the estate's wines.
At Darviot-Perrin, aging wines is a sensory journey, where time reveals the most subtle nuances and complex aromas. Discover the elegance and longevity of their wines, symbols of ancestral know-how and an unwavering commitment to quality and excellence.
