This legendary cuvée comes from old vines aged between 25 and 60 years, planted on flint-rich terroirs that give the wine a sharp minerality and exceptional depth. The grapes are harvested by hand at optimum ripeness, guaranteeing impeccable fruit quality. The meticulous vinification process is based on the use of indigenous yeasts, careful settling of the must and long ageing on the lees in large-capacity barrels (‘cigars’ and ‘tonnes’). When young, Silex is firm and taut, gradually revealing aromas of white flowers, roots and zan. The palate is dense, straightforward and chiselled, with vibrant energy and a lingering finish.
