The Côtes-du-Jura Bajocien – Chardonnay from the Labet estate subtly expresses the unique character of the Jura region. It comes from four plots planted between 1949 and 1979 on an east-facing plateau (known as “Les Varrons”), rooted in clay-limestone soils undergoing decalcification of Bajocian limestone. The vinification process follows organic principles and uses no additives: direct pressing, natural fermentation with indigenous yeasts, then 22 months of aging in 228-liter barrels. This aging on fine lees enriches the wine with remarkable aromatic complexity.
On the nose, it delivers delicate notes of white flowers, ripe fruit, and citrus, underscored by a beautiful freshness. On the palate, it combines roundness and structure, carried by a saline minerality typical of the Bajocian terroir. The texture is both full-bodied and vibrant, finding its balance in an elegant length. Recommended from 2025 onwards, this Chardonnay gains in harmony with age, retaining its potential until 2035.
