The Les Saugettes cuvée from the Pierre Girardin estate reveals an elegant Chardonnay from vines planted in 1970 using mass selection, facing west on sloping soils of limestone scree and marl. After manual harvesting of whole bunches, 12 months of ageing in 456-litre barrels (30% new) and 8 months in stainless steel vats produce a refined, mineral and austere wine, typical of a Savagnin terroir.

Description

From the Les Saugettes plot, located halfway up the western slope on steep limestone scree soils over white marl, this Chardonnay from the Pierre Girardin estate expresses itself with remarkable mineral elegance. The vines, planted in 1970 using mass selection, convey the depth and purity of the terroir. Deep roots in complex soil give the wine tension and austerity, perfectly illustrating the geological identity of the site.

The vinification process is respectful: manual harvesting of whole bunches to preserve the integrity of the grapes. The wine is aged for 12 months in large 456-litre barrels (30% of which are new), followed by 8 months in stainless steel vats. This structured process delicately balances the richness of the wood and the mineral freshness, without masking the typical characteristics of Chardonnay.

Les Saugettes offers a subtle nose dominated by notes of ripe citrus, green almond and a discreet smoky hint. On the palate, the attack is lively and sharp, delivering a mineral palette reminiscent of warm stone. The finish is dry, refined and almost mouth-watering, evoking the elegant Savagnin wines of Burgundy.

Served at 12°C, this structured Chardonnay is ideal with seafood, lightly crusted fish or fresh goat's cheese. Its racy profile makes it ideal for ageing for 5 to 8 years, during which time it will develop nuances of white honey, hazelnut and subtle toast.
