The Immersion Gift Set – Chassagne-Montrachet Voillenots 2020 from Domaine Coffinet-Duvernay is a special edition produced in very limited quantities. Designed as a true tasting experience, this gift set brings together two bottles that were originally identical but have undergone two different aging processes.
The first bottle continued its traditional aging in the estate’s cellars in Chassagne-Montrachet. The second was submerged six months after bottling in an underwater cage off the coast of the island of Ouessant, in Brittany. Protected by a wax seal before submersion, it spent sixteen months at a depth of 20 meters, subjected to the constant movement of the tides and the unique conditions of the marine environment.
The aim of this experiment is to study the influence of natural mixing caused by ocean currents on the wine’s evolution. By tasting the two bottles side by side, the connoisseur can compare the aromatic nuances, texture, and development of the 2020 Chassagne-Montrachet Les Blanchots Dessous based on its method of storage.
