This white wine made from Chardonnay reveals a golden colour and generous tears. The nose expresses very present, greedy and exotic aromas. The palate is lively and floral, with hints of citrus fruit. Barrel ageing will give it character.

Description

The grapes for this bottle come from the 'En Malpertuis' plot in Couchey, a small village north of Fixin. The Chardonnay vines in this plot are 40 years old and were planted in clay-limestone and silt soil.

The grapes are harvested by hand before undergoing a gentle, long pneumatic pressing, followed by 24 hours of settling. 30% of the harvest is placed in 1 or 2-wine barrels for fermentation, with the remainder in stainless steel vats. The wine is aged for 12 months on fine lees before being racked and blended. The wine is not filtered before bottling. Only 800 bottles are produced.
