Made from 100% Chardonnay grown on family plots in the heart of the Mesnil-sur-Oger and Cramant terroirs, this Champagne reflects the authenticity of a vineyard in conversion to organic and biodynamic farming. Mathieu Deshautels, who trained in Beaune and has gained experience in Burgundy, the Jura, South Africa and Australia, has reinvented traditional methods by vinifying without sulphur and prolonging the ageing process on the lees. Vinified in oak barrels for 11 months, this Brut Nature offers a rich, pure palette of aromas, combining delicate notes of fresh fruit, flowers and subtle minerality.
