

This Bourgogne Chardonnay has an intense pale yellow colour. The nose is elegant, with generous notes of butter and pear pastries. The palate is long and sustained. The aromas, indicative of a sunny vintage, are refreshed by acidity controlled by the choice of harvest date. Barrel ageing supports these aromas.
Ageing potential: 7-10 years.
The 15-year-old vines are located on the ‘Ravry’ parcel, which will shortly be reclassified as a Fixin village appellation. The plot is divided into 2 different soils: The lower part of the plot, which is rich in clay, and the upper part of the plot, which is richer in limestone.
The grapes are harvested by hand before undergoing a gentle, long pneumatic pressing, followed by 36 hours of settling. 30% of the harvest is placed in a 2-wine demi-muid for fermentation, with the remainder in stainless steel vats. The wine is aged for 12 months on fine lees before being racked and blended. Only 1000 bottles are produced.
