

This red wine made from Pinot Noir grapes has an intense red colour. The nose reveals a range of wild berry aromas. The palate confirms the balance between freshness and delicacy, with notes of redcurrants, blackberries and raspberries.
Potential aging 5 to 7 years.
The grapes for this bottle come from the ‘En Malpertuis’ plot in Couchey, a small village north of Fixin. The Pinot Noir vines in this plot are 40 years old and were planted in clay-limestone loam soil. This is the same plot as for the Côteaux Bourguignon blanc, but this time the chardonnay has been replaced by pinot noir.
The grapes are harvested by hand and 100% de-stemmed before being left to pre-ferment at 8°C for 5 days. Light extraction, little punching of the cap and lots of gentle pumping over with little oxygen to retain as much fruit and light tannins as possible. The wine is then aged for 12 months in 4-wine oak barrels before being racked and blended. The wine is not filtered before bottling. Only 300 bottles are produced.
