The Laisse Tomber Blanc – Riesling sur schiste perfectly illustrates Bastian Wolber's committed, artisanal approach. Working hand in hand with organic winegrowers, he chooses to harvest the grapes himself in order to capture the full expression of the grape variety and terroir. Here, Riesling finds an ideal playground in the schist soils, producing a tense, luminous wine with great aromatic depth. On the nose, it reveals notes of fresh citrus, white flowers and a subtle mineral touch. The palate is chiselled and straightforward, carried by a vibrant acidity that gives it balance and length. The Bastien Wolber estate embodies the new generation of Burgundy winemakers, combining German rigour with French sensitivity. Based in Volnay, he cultivates 3.2 hectares of Pinot Noir and Chardonnay using organic methods.
