Nuits-Saint-Georges ‘Aux Herbues’ from the Messager-Germain family is an exceptional red wine made from 45-year-old vines in the northern part of the appellation, on marl-limestone soil that is an extension of the Vosne-Romanée Grands Crus. Made from 100% Pinot Noir, this wine is vinified with 30% whole grapes, followed by pre-fermentation maceration at 8°C for 5 days. Ageing for 12 months in oak barrels, 30% of which are new, gives this wine silky tannins and remarkable aromatic complexity. Unfiltered, it fully expresses the character of its terroir.

Description
The Messager-Germain family's Nuits-Saint-Georges ‘Aux Herbues’ comes from a parcel ideally situated to the north of the appellation, on the outskirts of the village, benefiting from an easterly exposure and a marly-limestone soil similar to that of the Vosne-Romanée Grands Crus. The vines, which are 45 years old, are planted exclusively with Pinot Noir, the emblematic grape variety of Burgundy. The harvest, carried out by hand on 15 September 2023, includes 30% whole bunches, bringing structure and freshness to the wine. Pre-fermentation maceration at 8°C for 5 days precedes fermentation with controlled extraction, including 5 cap punchings and gentle pumping over to limit oxygenation.
Ageing for 12 months in oak barrels, 30% of which are new, enriches the wine with subtle woody notes and fine tannins. The wine is racked by the goat, a traditional method that respects the wine, and is not filtered, thus preserving its aromatic integrity and texture. This Nuits-Saint-Georges has a deep colour, a complex nose combining black fruit, spices and floral nuances, and a full-bodied palate with silky tannins and a long, elegant finish. It goes perfectly with red meats, game or mature cheeses, and has promising ageing potential. Only 900 bottles are produced.
