Description

Established in Volnay, the Henri Boillot estate has made itself - among other things - a specialty of Puligny-Montrachet. On 15 hectares, in the southern part of the Côte de Beaune, this discreet but renowned estate, well known to connoisseurs, has been vinifying and maturing for several generations (1885 to be precise) a remarkable range of prestigious wines on the greatest terroirs. Its great wines from the Côte de Beaune in particular, racy, vigorous and masterfully harmonious, have established its reputation. Seven hectares of white wines divided between Puligny-Montrachet Premier Cru (Les Perrières, Les Pucelles, Clos de La Mouchère), Meursault Premier Cru Les Genevrières and Savigny-les-Beaune Premier Cru Les Vergelesses. Today it is the son Henri who has taken over the reins of the family vineyard and also of the trading structure created in 1996 for whites exclusively, and in which each Premier Cru or Grand Cru is produced by a single supplier in order to preserve the authenticity of the terroir. The whites, generally early, improve superbly over four to five years. This at the cost of rigorous and constant work in reasoned agriculture with plowing of the vines (8 to 10 passages per year), the choice of working without recourse to weedkillers, a limitation of yields (40hl / ha on average) and harvest. manual as late as possible. Note that in 2005 the estate unified its name with the acquisition of Jean Boillot by Henri Boillot.

Henri Boillot is one of the lucky winemakers to have the chance to own vines on this grand cru. Aware of the gold he has between his fingers, he tries to be as little interventionist as possible, in the vineyard as in the cellar.
