Le Noyer is a Chardonnay from Jura, produced from an east-facing plot at 230 metres above sea level on clay-limestone soil. Massal vines planted in 1964, aged for 12 months in 456-litre barrels (30% new) then 8 months in stainless steel vats. The result is a crystalline, powerful, chiselled wine with characteristic saline minerality and intense notes of lime. Ideal for ageing or immediate consumption.
Le Noyer is a Chardonnay aged as a Vin de France, grown on a single east-facing plot at an altitude of 230 metres, planted in 1964 using mass selection. The soil, composed of decalcified clay resting on Bajocian limestone, gives the wine a beautiful mineral tension. The grapes are harvested by hand and vinified whole – a method that respects the pulp and the terroir – then the wine is aged for 12 months in 456-litre French oak barrels (30% of which are new), before being refined for 8 months in stainless steel vats. This approach, combined with Pierre-Vincent Girardin's expertise, creates a precise, harmonious wine with a chiselled palette that is mineral, crystalline and powerful, yet elegant and even indulgent. The nose opens with vibrant aromas of lime, while the palate is dynamic and salty, offering a long, structured finish. Very enjoyable now, it also has real ageing potential (8-10 years) for lovers of Burgundy from the Jura.
