Domaine Henri & Gilles Buisson's Saint-Romain ‘Sous la Velle - Absolu’ is an exceptional cuvée, vinified without added sulphur, which brings out all the purity of the Saint-Romain terroir. This emblematic parcel, situated at an altitude of 370 metres, stretches over marl and limestone scree, giving the wine a remarkable minerality. The 60-year-old vines dig deep into the soil, giving this Chardonnay a unique density and aromatic richness.
On the nose, this wine reveals intense aromas of yellow-fleshed fruit, such as peach and apricot, as well as notes of preserved lemon. On the palate, the attack is frank and generous, with an enveloping texture and a dynamic vinous structure. The long, lingering finish is marked by a delicate hint of salt and iodine, typical of the domain's wines. The absence of added sulphur accentuates the liveliness and natural expression of the grape variety, making ‘Sous la Velle - Absolu’ a wine that is both complex and authentic.
