Domaine Henri & Gilles Buisson's Saint-Romain ‘Sous Roche - Absolu’ is an exceptional Pinot Noir, made from 60-year-old vines rooted in the limestone marls of Saint-Romain. This parcel, located at an altitude of 300 metres on the hillside facing the village, benefits from an ideal microclimate, combining warm currents and cool altitudes. This unique terroir gives this wine a personality marked by generous aromas of red fruit and a freshness typical of high-altitude wines.
The special feature of this ‘Absolu’ cuvée is that it is made without added sulphur, a natural approach that brings out all the purity and aromatic intensity of pinot noir. On the nose, this wine reveals deep aromas of ripe fruit and spices, while on the palate, it offers a superb, enveloping and fresh wine structure. The long finish is a testament to the maturity of the old vines and the perfect balance of this wine.
With age, after four or five years, Saint-Romain ‘Sous Roche - Absolu’ evolves towards more complex, spicy notes, revealing its full potential and depth. To preserve its quality, we recommend cellaring it at a temperature of less than 14°C, which is particularly important for this sulphur-free cuvée. This wine is ideal for lovers of natural wines who want to discover all the richness of an authentic terroir that respects nature.
