Domaine Fernand & Laurent Pillot's Chassagne-Montrachet 1er Cru “Vide-Bourse” is an emblematic Côte de Beaune cuvée, made from 45 ares of Chardonnay vines planted in 1967 and 1975. This prestigious climat, located just a few meters from Grands Crus such as Bâtard-Montrachet, benefits from a very draining clay-limestone soil, dotted with small pebbles, offering ideal exposure for optimal ripening of the grapes.
Hand-picked grapes are carefully selected. After gentle pressing, the must ferments in French oak barrels, 30% of which are new, followed by 15 months of ageing. This process gives the wine a remarkable aromatic complexity, combining notes of citrus, pear, white flowers and vanilla. Over time, aromas of honey, marzipan and caramel may emerge, further enriching the wine's profile.
On the palate, this Chassagne-Montrachet 1er Cru stands out for its controlled power, elegance and persistent length. Its balanced structure and subtle minerality make it a wine for laying down, reaching its peak between 3 and 10 years, or even longer in great vintages. Perfect with grilled fish, white meats in sauce or mature cheeses.
Serve at a temperature of 14°C to fully appreciate its richness and finesse.
