Description
The Chassagne-Montrachet 1er cru ‘Morgeot’ red wine from the Fernand & Laurent Pillot estate comes from a 22-acre plot located in the ‘Les Crottes’ area, very close to Morgeot Abbey. Planted in 1953 and 1981, these Pinot Noir vines are trained using the Royat cordon method on a gentle south-east facing slope, providing optimal ripeness for the grapes. The clay soil gives the wine power and concentration.
The vinification process is traditional and precise. After being harvested by hand, the grapes are destemmed and placed in vats. Cold maceration precedes alcoholic fermentation, which is carried out with regular punching down and rigorous temperature control. The wine is aged for 16 months in French oak barrels, 30% of which are new.
On the palate, this Burgundy wine reveals beautiful intensity, present but mellow tannins, and aromas of black cherry, morello cherry and sweet spices. Its full structure and complexity make it an excellent wine for ageing, to be enjoyed between 5 and 15 years. It will enhance a coq au vin, game birds or a cheese from the Abbey of Cîteaux.
