Description
The Volnay red from the Fernand & Laurent Pillot estate is a beautiful expression of this iconic Côte de Beaune terroir. Composed of five plots of Pinot Noir, planted between 1960 and 1999, this cuvée includes two plots classified as Premier Cru – Ronceret and Brouillards – which have been deliberately downgraded in order to enrich this exceptional cuvée.
The vines, pruned using the simple Guyot method, produce grapes that are harvested by hand. After destemming, the berries are placed in vats for cold maceration for a few days, followed by traditional fermentation with regular punching down and temperature control. The wine is aged for 15 months in French oak barrels, a third of which are new.
On tasting, this Volnay reveals a delicate nose of redcurrant, cherry and sweet spices. The palate is round, silky and elegant, with good length. This wine combines vigour and refinement, true to the reputation of the appellation. It is ideal with roast beef, free-range poultry or an Alpine cheese such as Borgé de Valloire.
