Domaine Nicolo Grippaldi

Domaine Nicolo Grippaldi, located in Gagliano Castelferrato, in the province of Enna in Sicily, is a benchmark in biodynamic viticulture. Perched at an altitude of 651 metres, this estate benefits from an exceptional terroir, with varied soils rich in clay and limestone. Founded in 2015 by Nicolo Grippaldi, who draws inspiration from the practices of his ancestors and his apprenticeship in Florence, began by planting 11,000 vines of Nerello Mascalese and Nero d'Avola. The vineyard is managed entirely by hand and strictly follows biodynamic principles, using special preparations such as 500 and 501, applied according to a lunar calendar. The grapes are harvested by hand to ensure optimum quality. Fermentation takes place naturally, without the addition of commercial yeasts, and the punching down and pumping over techniques are meticulously carried out by hand.

Its elegant, pure and authentic wines have already caused a sensation on the gastronomic scene, where they can be found in Michelin 3-star restaurants such as Enrico Bartolini in Milan and Le Mirazur in Menton in the south of France. The latter was voted best restaurant in the world in 2019 and 2020.
