

This Bourgogne Chardonnay from Domaine Fernand & Laurent Pillot, made from young vines planted in 2011 and 2017 on limestone soils in Chassagne-Montrachet and Pommard, seduces with its freshness and aromatic purity. Vinified in vats and then aged in French oak barrels for 11 to 12 months, it offers aromas of white flowers and citrus fruit, with a full, taut mouthfeel. Ideal as an aperitif.
Domaine Fernand & Laurent Pillot's Bourgogne Chardonnay is made from two young plots planted in 2011 and 2017, located close to the winery in Chassagne-Montrachet and on the Pommard plain. These vines, grown on very chalky soils, give the wine remarkable freshness and tension.
The grapes are harvested by hand, guaranteeing rigorous selection. After pressing, the must is fermented in vats, then aged in French oak barrels for 11 to 12 months, without stirring, to preserve the purity of the fruit.
On tasting, this wine has a brilliant pale yellow color. The nose reveals delicate aromas of white flowers and citrus. On the palate, it is full-bodied, delicate and long, with a lovely mineral tension.
This Bourgogne Chardonnay can be enjoyed as an aperitif, with grilled fish or dishes in cream sauce. It can be enjoyed young for its liveliness, or after 2 to 7 years' cellaring for greater complexity.
