Domaine Fernand & Laurent Pillot's Puligny-Montrachet “Noyers Brets” is an exceptional white wine from a single 50-acre parcel planted in 1989, located in the immediate vicinity of the prestigious Puligny-Montrachet Grands Crus. This clay-limestone terroir gives the Chardonnay a refined expression of finesse and balance.
The hand-picked grapes are carefully vinified: fermentation in French oak barrels (25% of which are new) for two months, followed by 11 to 12 months of ageing. This meticulous process allows the wine to develop delicate aromas of white flowers, citrus and vanilla. On the palate, it is distinguished by its fullness, finesse and persistent length.
This Puligny-Montrachet goes perfectly with refined dishes such as pan-fried scallops, fish in sauce or Bresse chicken in cream sauce. Served between 12 and 14°C, it reveals all its aromatic complexity. Its ageing potential is estimated at between 2 and 7 years, allowing it to evolve beautifully in the bottle.
