This Coteaux Bourguignons red from Fernand & Laurent Pillot embodies the elegance of accessible Burgundy wines. Made from three parcels planted between 1957 and 1979 in the commune of Chassagne-Montrachet, this blend of 85% Gamay and 15% Pinot Noir is grown in cordon de Royat on clay-limestone soils.
Hand-harvesting, followed by vinification combining cold maceration and partial carbonic maceration, reveals a vibrant, fruity wine. Aged for 11 months in stainless steel vats and French oak barrels, it refines its structure while preserving the freshness of the fruit.
On the palate, it seduces with notes of cherry, raspberry and sweet spices, with a supple texture and mellow tannins. Served at 15-16°C, it's the perfect accompaniment to fine charcuterie, roast poultry or simmered dishes such as boeuf bourguignon. This wine can be enjoyed now, or laid down for up to 5 years to develop more complex aromas.
