Description
The Chassagne-Montrachet Vieilles Vignes red wine from the Fernand & Laurent Pillot estate is a wine of character produced from four historic plots planted between 1959 and 1969. These vines, pruned using the Cordon de Royat method, naturally produce few grapes, but offer exceptional concentration and maturity. This exceptional terroir reveals all the complexity of Pinot Noir.
The grapes are harvested by hand, then destemmed, placed in vats and vinified traditionally. Cold maceration precedes natural alcoholic fermentation, with regular punching down and temperature control. The wine is then aged for 14 months in French oak barrels, 20% of which are new, imparting elegance and structure.
On tasting, the wine seduces with its deep colour, aromas of Burlat cherries and ripe red fruits, and spicy notes. On the palate, it is beautifully smooth, supported by present but silky tannins. This is a wine for ageing, best enjoyed between 4 and 8 years. It pairs perfectly with rib of beef, leg of lamb or a dish with sauce.
