Champagne Ullens “H” 2022 is a unique cuvée that pays homage to Hermonville, a historic village in the Massif de Saint-Thierry whose vineyards have been documented for over a thousand years. This iconic terroir, first mentioned in the 9th century in the Polyptych of Saint-Remy Abbey, remains to this day at the heart of Domaine de Marzilly’s identity.
Made from 100% Meunier grapes sourced exclusively from Hermonville, the “H” cuvée is based on a rigorous and minimalist winemaking philosophy. The grapes are pressed plot by plot using a traditional 4,000-kg Coquard press before being vinified in 205-liter Champagne barrels. Fermentation and aging on fine lees continue for eleven months before bottling in September 2023.
The wine then undergoes twenty-three months of aging in the cellar, complemented by manual racking, a long remuage on racks, and disgorgement à la volée. No additives, no added sulfur, and no fining or filtration are used. Offered as a Brut Nature with no dosage, it expresses the identity of its terroir with absolute sincerity.
On the palate, the Ullens “H” 2022 Champagne reveals a pure and energetic expression of Meunier. Aromas of fresh white fruit, citrus, wildflowers, and chalk are accompanied by remarkable tension and deep minerality. The palate is precise, vibrant, and briny, carried by great freshness and a long finish.
Produced in a limited run of just 2,467 bottles and 144 magnums, this exclusive cuvée embodies Maxime Ullens’s vision: to authentically showcase the great terroirs of northern Champagne.
Domaine de Marzilly is an independent winery located in the Massif de Saint-Thierry, northwest of Reims. Founded in 2012 by Maxime Ullens, it was born out of the restoration of a 12th-century château surrounded by historic vineyards. Growing primarily Meunier on the sandy soils of Hermonville, the estate produces Champagnes that are terroir-driven, elegant, and deeply influenced by their origin.
