Champagne Ullens “Cuvée M” 2018 represents the most intimate expression of the Domaine de Marzilly. This single-vineyard cuvée is made exclusively from grapes grown on a plot located in the Marzilly lieu-dit, the estate’s historic birthplace and the very heart of the identity championed by Maxime Ullens.
The “M” refers both to Marzilly and to the vintage character of this exceptional cuvée. Made from 100% Chardonnay, it precisely expresses the unique personality of the sandy terroirs of the Massif de Saint-Thierry. The grapes are pressed using the traditional 4,000-kg Coquard press before being vinified and then aged for twelve months on fine lees in oak barrels, without bâtonnage, to preserve the wine’s purity.
After bottling in September 2019, the cuvée underwent an exceptional aging process of over 70 months on slats. The disgorging and riddling are performed entirely by hand, in keeping with the great traditions of Champagne. No fining or filtration is performed. The Extra Brut dosage of just 1.8 g/l highlights the wine’s precision and natural tension.
On the palate, the 2018 Cuvée M reveals a complex bouquet blending ripe citrus, white flowers, white-fleshed fruits, brioche notes, and subtle toasty hints from oak aging. The palate impresses with its depth, creamy texture, and remarkable mineral energy. The long, elegant finish reveals the full grandeur of this little-known terroir.
Produced in a limited run of just 1,315 bottles, this rare cuvée stands out as one of the finest expressions of Chardonnay and the expertise of Domaine de Marzilly.

Domaine de Marzilly 'Ullens'
Domaine de Marzilly is an independent winery located in the Massif de Saint-Thierry, northwest of Reims. Founded in 2012 by Maxime Ullens, it was born out of the restoration of a 12th-century château surrounded by historic vineyards. Growing primarily Meunier on the sandy soils of Hermonville, the estate produces Champagnes that are terroir-driven, elegant, and deeply influenced by their origin.
