Domaine Fernand & Laurent Pillot, established in Chassagne-Montrachet since the 17th century, continues a family winegrowing tradition on nearly 15 hectares. Their Chassagne-Montrachet Blanc is made from five parcels of Chardonnay, planted between 1987 and 2013, on limestone-rich clay soils.
The hand-picked grapes are gently pressed before fermentation in French oak barrels, 25% of which are new. Aging for 11 to 12 months gives the wine elegant structure and aromatic complexity.
On the nose, aromas of white fruit, such as green apple and peach, mingle with floral and finely woody notes. On the palate, the wine is full-bodied, round and well-balanced, with fine minerality and a lingering finish.
This Chassagne-Montrachet Blanc goes perfectly with seafood, noble fish and soft cheeses. To be enjoyed between 12 and 14°C, it can be enjoyed now or after a few years' cellaring to reveal its full complexity.
